Hominy Spanish Salad

In a large saucepan, add 4 teaspoon oil, heat over medium-high heat. Add 4 large shallots, and cook, frequently stirring until softened for 3 minutes. Season with salt and pepper reduced the heat to medium low and sautéed, stirring until shallots are sticky and browned, for 8 minutes. Add 1 tbsp. Water and cook, stirring until shallots are dark brown, about 3 -5 minutes. Now add 1 teaspoon whole grain mustard and 2 teaspoons red wine vinegar, stir to combine.
