  • 2 celery stalks, finely diced

  • 1 carrot, peeled and finely chopped

In a small soup pot, heat oil over medium-high heat, now add garlic, carrots, onion, parsnip, celery, broccoli and sauté over low heat for five minutes, stirring generally.

Beet Soup

Add the unpeeled beetroots in a soup pot, cover with water and bring to boil, simmer for 30 minutes until tender. Remove the heat, drain off the water and set aside for cool.
