  • 2 eggs
  • One tsp. Margarine or butter
  • One tsp. mayonnaise
  • Salt and pepper to taste
  • One tsp. Water (optional)


In a medium bowl, beat the eggs, mayonnaise, and water with the fork. Heat the margarine in a skillet over low heat. Pour the eggs dough into the skillet and stir constantly as they cook. Remove from the heat and transfer the plate when they are set. Don’t overcook. Top with salt and pepper if you like otherwise it’s also good without salt and pepper.

Asparagus Quiche

  • 1 pound fresh asparagus
  • Ten slices bacon
  • Two unbaked pie shells
  • One egg white, lightly beaten
  • 4 eggs
  • 1 ½ cups half and half cream
  • ¼ tsp. ground nutmeg
  • Salt and pepper to taste
  • 2 cups shredded Swiss cheese


Preheat the oven 400 degrees F. Cut the asparagus into 1-inch pieces and place in a steamer over 1-inch boiling water and cover. Sauté until tender but still firm, for 2 to 6 minutes, drain and set aside for cool. In a large deep skillet add bacon, cook over medium-high heat until light brown. Remove from the heat and set aside.

Beat egg white in a bowl and brush pie shells with it. Sprinkle crumbled bacon and chopped asparagus into pie shells. Whisk together eggs, cream, nutmeg, salt, and pepper.   • Eight slices bacon
  • 4 ounces shredded Swiss cheese
  • 2 tbsp. melt butter
  • ¼ cup finely chopped onion
  • One tsp. salt
  • ½ cup all-purpose flour
  • 1 ½ cups milk
  • Four eggs, beaten


Preheat oven to 350 degrees F and lightly greased the pie pan which you use for an oven. Add bacon in a large deep skillet, sauté over medium high heat until light brown. Remove from the skillet and set aside. Line bottom of pie pan with cheese and crumbled bacon. Beat together eggs, butter, onion, salt, flour and milk, until smooth. Pour into the pie pan. Transfer to ready oven and bake for 30 minutes or until set. Serve hot or cold as you like.
