How to Cook Rice with Mixed Vegetables

Today I’ll share a spicy rice recipe. It is not vegetable Pulao recipe or not veggie biryani. However, it is simple vegetables mixed the rice. It is the very simple recipe and you can make when you come home after a hectic day in the office, school, or university and don’t have time to cook or feeling tired too lazy to cook. So, question is that how to cook rice with mixed vegetables. It is too easy and simple. This recipe does not require ginger garlic paste or any other extra material for fried rice. Mixed vegetables fried rice is great for lunch, dinner, and small get-togethers. I mentioned this recipe with very basic steps, however, people think that cooking is not too tough and one can make their family healthy with simple delicious dishes within a few minutes time.

How to Cook Rice with Mixed Vegetables

Prep Time: 10 minutes

Cook Time: 20 minutes


  • 1 cup Basmati rice
  • 2 medium size onion, cut lengthwise
  • 1 teaspoon ginger finely chopped
  • 1 teaspoon Green chili
  • Mint leaves
  • 1 cup mixed vegetable
  • Few coriander leaves
  • 1 tablespoon fresh lemon juice
  • Salt to taste

For the Seasoning

  • 1 tablespoon oil
  • 1-inch piece cinnamon
  • 2 cloves
  • 1 cardamom (optional)


Clean basmati rice and soak for 15 minutes. Drain the water totally and keep it aside. Cut all the vegetables lengthwise. Used 1 medium sized carrot, 4-5 beans, 1 small potato, ¼ cup peas, and 3-4 cauliflower florets – together it was a little more than 1 cup. Wash and chop coriander leaves and mint.


Heat the oil in a pan and add seasoning ingredients, sauté for few seconds and then add onion, ginger, and green chili. Cook until onion turns pink and adds all the veggies.

Note: “if you are going to prepared this in a pressure cooker, you can add veggies raw.”

If you are going to cook in a pan with lid follow this recipe. Cook veggies for 2-3 seconds and then add cupped coriander and mint leaves. Combine well.

Add rice, 2 cups of hot water, lemon juice, and salt – boil it.

Once rice starts boiling, reduce the flame, and cover it with lid, sauté until your rice done. Fluff your rice with the fork and serve hot.
