  • 2 quarts vegetable / peanut oil
  • ½ cup cornstarch
  • ½ cup all-purpose flour
  • ½ tsp. baking powder
  • ½ cup water
  • ½ cup vodka
  • One medium clove garlic, minced
  • One head cauliflower cut into 1-inch pieces
  • ¼ cup picked celery leaves (option)
  • 1/3 cup hot sauce, such as franks
  • Kosher salt


Add oil in a large wok; preheat oil 350 degrees F, deep fryer. In a large bowl plain flour, baking powder, cornstarch and two teaspoons kosher salt, stairwell until solidarity.
