Cauliflower Chowder

All soups are pureed, nice and delicious, but sometimes we want something different with little more consistency and size to it: enter chowder, chowder is a fantastic comfort food, which contains a complete head of cauliflower, miscellaneous other vegetables, and healthy fats.

Cauliflower chowder is a very delicious and tasty soup. it is healthy soup for kid’s and also old young people. The interests here also give the soup a nice depth of flavor without being spicy in the mouth scorching logic. This soup is not enough protein to make this a complete meal, but it brings a nice flavor.

If you like to make this soup into a full meal on its own, you could add some chicken, fish, and other seafood at the end of the cooking. The cauliflower was an amazing low carb substitute and it’s a perfect food for everyone. A creamy, low carb, hearty, and wonderfully cozy soup is mention below.

  •  slices bacon, diced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup 2% milk
  • 1 head cauliflower, roughly chopped
  • 1 bay leaf
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves

In a large skillet add bacon, heat bacon over medium high heat, sauté it until brown and crispy for about 6 to 8 minutes. Remove from the heat and transfer to a pepper towel lined plate, set aside.

Melt butter in a large dutch oven over medium heat. Add onion, garlic, celery and carrots. Cooked and stirring frequently, until tender, about 3 to 4 minutes. Place in cauliflower and bay leaf to the dutch. Cooked and stirring irregularly, until tender about 3 to 4 minutes. Whisk in flour until lightly browned for 1 minute. Gradually whisk in chicken broth and milk and cook, stir constantly, until slightly thickened, about 3 to 4 minutes.


Bring to boil, reduce the heat and simmer until cauliflower is tender, about 12 to 15 minutes. Season with salt and pepper, to taste. If the soup is too thick, add more milk as needed until desired consistency is reached. Dressed with bacon and parsley, if you like, serve immediately.

Note: Clocking in at 265 calories, with 7 grams of carbs and 15 grams of protein per serving. I could not be more pumped about this chowder. You will LOVE it!.
