Crab and Swiss Quiche
Total Time: 55 minutes
- 2 eggs
- ½ cup milk
- ½ cup mayonnaise
- One teaspoon cornstarch
- ½ pound imitation crab meat, flaked
- 1 ½ cups shredded Swiss cheese
- 1 (9inch) unbaked pie crust
Preheat the oven to 350 degrees F. in a medium-large bowl add eggs and lightly beaten and then add milk, mayonnaise, and cornstarch and mix. Add in the bowl imitation and Swiss cheese also and stir it together, until smooth. Pour it into pie shell. Bake in the ready oven until a knife inserted into the center of the quiche comes out clean, for about 30 to 40 minutes. Serve and enjoy.
Shrimp and Grits Louisiana Style
Total Time: 40 minutes
- ½ cup diced Tasso ham
- 2 tbsp. olive oil
- 2 tbsp. diced onion
- ¼ cup white wine
- 1 cup heavy whipping cream
- 1 cup water
- One pinches salt
- 6 tbsp. grits
- 2 tbsp. diced green bell pepper
- 20 medium shrimp, peeled and deveined
- Salt and ground black pepper, taste
- 1 tbsp. chopped green onion green parts only
In a saucepan add water and one pinch salt and boiled; slowly mix the grits, stirring constantly. Reduce the heat and simmer grits until tender or smooth, for about 20 minutes. Set aside and cover it for warm. Over medium-high heat, heat the olive oil, sauté and stir Tasso ham until crisp. Stir in onion and green bell pepper and sauté until onion is the mix, about 4 minutes. Lightly mix the shrimp with the vegetables and olive oil until pink for about 30 to 45 seconds.
Remove the shrimp and set aside. Now pour the wine into the pan and stir, dissolving any browned bits of food on the bottom of the pan, add cream and reduce the heat very low. Boiled until thickened for about 10 minutes, season the top with salt and black pepper. Divide the dough into two equal parts and pour it in serving plates and add ten shrimp of each plate. Pour cream sauce over grit and sprinkle each plate with chopped green onion. Serve and enjoy.
Corned Beef Hash
Total Time: 40 minutes
- Six large potatoes, peeled and diced
- 12-ounce corned beef cut into chunks
- One medium onion, chopped
- 1 cup beef broth
Heat the large dark over medium heat, combine all the elements. Cover and simmer it, until potatoes are of mashing consistency and the liquid is almost gone. Then mix it well and serve.
