- 12 oz. raspberries, fresh or defrosted from frozen
- 2 tablespoon granulated sugar
- 2 cups milk
- ½ cup cream
- 6 oz. white chocolate, finely chopped
- 1 teaspoon vanilla extract
- Pinch salt
Sprinkle the sugar in the raspberries and stir to combine. Allow sit for 10 to 15 minutes until they start to soften and release their juices. Place the raspberries in the blender and blend until smooth. Then pour the puree through the strainer to remove the seeds. You should be left with the ¾ cup of juice. If you have more, save it for another use.
Add cream and milk in a medium saucepan, bring to boil and simmer, until bubbles to appear along the sides of the pan’s edges, but don’t bring to full boil. Remove the heat and add the chopped white chocolate. Toss until the chocolate is melted, then add raspberry juice, vanilla extract, and salt. Serve with whipped cream and raspberry on top.
