- ½ cup slivered almonds
- 2 cups chicken broth
- ½ cup uncooked brown rice
- ½ cup uncooked wild rice
- 3 tbsp. butter
- 3 onions, sliced into ½ inch wedges
- 1 tbsp. brown sugar
- 1 cup dried cranberries
- 2/3 cup fresh sliced mushrooms
- ½ teaspoon orange zest

Bake almonds on baking sheet for 5 to 8 mins. Mix brown and wild rice in a medium saucepan, and bring to boil. Reduce heat to low, cover, and simmer for 45 mins, until rice is tender, and broth is absorbed. In the medium saucepan, melt butter over medium heat, add onion and brown sugar. Cook until butter is absorbed and onion is translucent and soft. Reduce heat and cook for additional 20 mins, until onion is caramelized. Stir mushrooms and cranberries into the skillet.
