You know that if I order this soup at a restaurant that they have quarts full of heavy cream into the mix. This is unnecessary if you ask me.
This is good news for you; you don’t need the extra amount of cream to make a creamy and delicious potato soup. Not do you a ton of time. This soup is ready within 30 minutes and also makes a ridiculous excess. If you don’t like bacon, you can completely skip that part. And you add cheese as you like or you get the proper sound of soup. Basically, this is a fantastic recipe for potato soup.

- 5 slices bacon, diced
- 3 tablespoons bacon grease (reserved) or butter
- 1 cup diced white or yellow onion
- 1/4 cup all-purpose flour
- 2 cups chicken stock
- 2 cups milk, warmed
- 5 pounds potatoes, peeled (if desired) and diced (I recommend Yukon Gold potatoes)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup plain Greek yogurt or sour cream
- 1 teaspoon Kosher salt, or more to taste
- 1/2 teaspoon freshly cracked black pepper
- optional toppings: thinly sliced green onions or chives, extra shredded cheese, extra bacon, sour cream

Heat a large skittle over medium-high heat. Add chop bacon and sauté until crispy, thrilling sporadically. Remove skittle from the heat, transfer the bacon from the plate, using a slotted spoon, reserving about 3 tablespoons of bacon grease in the skittle (extra dough discard). And if you have a short time, you can add the potatoes and onion while the bacon cooks to save time.
Add onion and cook for 5 minutes, occasionally thrilling until soft. Sprinkle the flour on top of the onion and toss until mix well. Cook for one more minute to cook the flour, stirring frequently. Then stir in the chicken stock until combined. Add the milk, potatoes in the skittle and cooked bacon bits until mix. Continues the cooking until the dough reaches a simmer but is not boiling.
Decrease the heat to medium-low heat, cover the skittle and boiled for about 10 to 15 minutes or until potatoes are soft, tender, stirring occasionally every few minutes so that the bottom does not burn.
When the potatoes are tender, stir in the cheddar cheese and Greece yogurt, salt and pepper to taste. Potato soup is ready and serves warm with dressing.
